The authors have limited knowledge of making gourmet ice cream. Their recipes are hit or miss, and leave much guesswork to the chef. After all, making dreamy ice cream is a delicate matter! They fail to explain the techniques to make good frozen desserts, and even include cheat ingredients like gelatin to achieve desired consistencies. The scope of recipes is limited. Recipes for cinnamon ice cream, cappaccino ice cream were nowhere to be found.
There are, nonetheless, a few redeeming recipes: fresh raspberry ice cream and orange blueberry ice cream.
